Panic is setting in…Christmas is 13 days away and a menu needs to be drawn up, recipes sifted through, horror ingredients bought! So tasty, yet so damaging! Well not this year folks, scooch on over! Grab your pen and notepad! Here are 3 full proof Christmas pudding recipes that not only look pretty but taste yummy too!
First on the list is a firm favourite in our kitchen. The original recipe is courtesy of my mom-in-law, a few tweaks later and I give you mango, paw paw, coconut cream, honey, date cranberry surprise! No wait, cranberry date whipped coconut fruit medley? ugh hang on, name yet to be decided on. Here it is..super safe, super tasty and 100% guilt free!
You will need: cue impressive music…
2 mangoes, chopped up (poor buggers)
1 paw paw, thinly sliced!
2 cans coconut cream, (the real deal, full cream)
2 tablespoons raw honey
4 tablespoons dried cranberries
1 packet jerusalem dates/ 250 grams chopped dried/medjool dates (chop ’em up)
How:
Depending on number of guests, adjust ingredients. The above is ample for 4-6 people.
Start on the bottom of a glass dish, layer the mango and paw paw. Drain all excess fluid! Now whip the coconut cream until stiff! Scoop out on top of the fruit! Spread it around to cover entire bowl. Drizzle your raw honey in a spiral pattern around the dish. Then using a toothpick, pull the honey from the inside outward in lines to form spider pattern! Now sprinkle cranberries and dates on top. Allow to set in the fridge!
Bazinga! whip coconut fruit concoction 🙂
SORBET you say!

Delightful, delectable and so safe! Unless you add vodka, don’t do that.
You can use any fruit you like. I love using mango’s or the granadilla’s we grow on the farm!
You will need:
1 Cup stevia or xylitol, you can use honey aswell but I find the powdered sugar works better here.
2 tablespoons freshly squeezed lemon juice, don’t cut corners and buy juice EW!
2 cups granadilla pulp
2 large egg whites, beat until firm peaks form.
How:
Heat the juice and stevia on the stove, low heat until all dissolves. Add the pulp to the mix, and leave it in the fridge to cool. After the mix has cooled down, pop it in the freezer for an hour or so..then gently fold in the egg whites until well mixed in and re freeze! Serve with mint or peppermint leaves. Even a sprinkle of slivered almonds.
Coconut treats:

You will need:
1 cup coconut flour
3 cups desiccated (i always feel so sorry for the coconut when I read this word) coconut
1/3 cup raw honey
2 tsp pure vanilla extract
3Â tbsp water
1 tablespoon coconut oil
How: Mush all the ingredients into a blender except the water, blend for 2minutes and then slowly add water until it forms a ‘dough’ ball. Roll into small balls, place in a tupperware or baking dish and store in fridge until nice and firm. They last long. So make oodles! Eat 2 per serving!
Modify the recipe by adding 2 tablespoons raw cocoa for a nice ‘chocolatey’ spin or some chopped dates.
