Sundays have me visualising all four of us in bed, with tea and a stack of flapjacks. I can do this now with a guilt free conscience. Thanks to trial and error and a few unsuccessful tries at making healthy flapjacks!
Eventually though, I have a full proof recipe to turn to! Natural, wheat free, refined sugar free and vegan if necessary
Here goes:
What you will need:
2 cups of 100% rye flour/self raising gluten free flour
2 large free range eggs (or flax eggs, 1 tbsp flaxseeds to 3tbsp water. Per egg)
4 teaspoons baking powder
2 large banana’s
1/2 cup raw honey (optional but not necessary because the banana’s are sweet)
1 cup of full cream milk/almond milk
Pinch himalayan sea salt
2 tbsp melted coconut oil
How to:
Mash the banana’s. Before the kids notice!
Add the milk, honey if you choose to add in, the eggs or flax eggs and all the other ingredients, Blend these together well. Leaving the flour for last. Sprinkle flour bit by bit and blend/whisk as you go. so that you don’t have any clumps forming!
Heat a skillet (I like to do this on the braai so it feels like we are camping).
Use the coconut oil bit by bit to keep the skillet non stick. Pour 1 tbsp circles onto the skillet at a time. Wait until bubbles form on the one side and flip them over!
Top with drizzle honey and whipped coconut cream!
Strawberries and any fruits work just as well!
