Bulgar Tatsoi mince Patties

Not only is the title a mouthful, so is the patty! YUMMO!

The kids and I experimented last night and came up with these. My daughter is a super fussy eater and she asked whether we could have them every night because she ‘loved loved loved them!’. P.s when your kiddies or spouse ask what the green stuff is, answer as I did…herbs, my bunny, its just herbs!

What you will need:

1 cup dried bulgar wheat or quinoa

2 cups boiled water. Soak the 1 cup of bulgar wheat in the 2 cups boiled water, leave for 20minutes then drag a fork through it. IF you are using quinoa. Follow the cooking instructions on the package. Remember to rinse quinoa off before you cook and then after cooked as well to remove that bitter taste!

500g lean mince ( I like to use ostrich or turkey mince)

3-4 large tatsoi leaves, mutilated in the blender until they only resemble a paste of ‘herbs’ as they shall be named. if your family isn’t fussy, leave the tatsoi nice and chunky.

2 large free range eggs (to help bind)

minced garlic and mixed herbs (actual herbs, not the fake tatsoi herbs)

once the bulgar wheat or quinoa is ready, plonk it in a bowl. Add the raw mince and all the ingredients in. Remove all rings and watches and get stuck in. SMoosh it altogether until a nice clumpy mass starts to form. Check the consistency by making a ball and seeing if it holds form. if not, then add some raw oats (2 tbsps should do it) that you zoosh in the blender for a few seconds. Let the munchkins help with the mixing and rolling. I find it helps them get excited about the meal.

Make a ball (depending on the size patty that you are after, I found the smaller ones were easier to turn over). Put 2-3tbsp coconut oil in an oven dish and allow to melt. Place the patty balls on the well oiled oven dish and then gently squash them down. Brown the patty on one side and then flip them all over and brown on the other side.

I paired these patties with some scrumptious sweet potato wedges roasted in coconut oil and sprinkled with himalayan sea salt.. so while all of this is happening. Steam some sweet potatoes, then slice them length ways into long chips.  Roast them in an oven dish, in coconut oil until nice and brown on either side and sprinkle with Himalayan sea salt!
