When i made the first batch, it was really just to have an extra snack option lying around for me because there was NOOOOOOOOOO way my hubby and kids were going to like this, maybe Kian but definitely not Kiara and Daniel. How wrong was I!!! I made the first batch two weeks ago and I have literally had to make a new batch every three days, they are wolfing it down like they don’t get fed any other food! I cannot take full credit for this recipe. I followed a recipe off the internet and just tweaked it a bit.
Here it is:
You will need
1.5 cups cooked chickpeas. You will need to soak the chickpeas overnight and then cook them until soft the next morning, sometimes this takes up to an hour! Poke em to check if they are soft, if not they won’t mash well. (I like this brand from faithful to nature at 39.99 per box it goes a long way and I got 4 portions out of it.)

1 cup natural nut or peanut butter. I like using nature’s choice peanut butter or making my own (recipe also on my website)
1/2 cup raw honey OR 1 cup puree’d medjool dates (or you can soak dried dates in rooibos tea overnight)
1/3 cup melted coconut oil (I use Lemcke)
pinch himalayan sea salt
1 cup raw cashews
1.5 tsp vanilla extract.
Mix all the ingredients into your blender, blend well until all smooth! this makes a massive difference to how palatable your fudge is!
Once blended, spread out onto a baking tray and place in the freezer for an hour. Remove and cut into bite size blocks, put back in freezer!
TA-DA you did it. Now the challenge is to stop at two blocks hahahah
