Who doesn’t remember sticky marshmallow rice crispy treats? I could shove those things in by the handful and play a game of ‘chubby bunny’ even If I was alone. I didn’t care, those things were addictive! When you add the sugar from the marshmallows and the sugar in rice crispies and you eat 100grams (which isn’t difficult), you are looking at a whopper 15grams of sugar just from the rice crispies and around 35grams of sugar from 50grams of marshmallows. 85grams!!! Rocket fuel! sies

Here is a recipe for my cocoa and date crispy treats that will have the kiddies calmly coming back for more and you can give it to them, guilt free!
as many fresh medjool dates as you can gets your hands on! Dried dates will do too, you will just need to soak them overnight in warm water, I like to add a nice rooibos tea bag to it for a bit of extra flavour. Then blend the dates and the tea (not the bag, ew) until nice and smooth and put in your fridge for a divine sugar substitute in your baking.
For a batch you will need 2 cups of puree’d dates.
1 cup of nut/peanut butter (I like to use natures choice or make my own, check my recipes page for the ‘how to’). I don’t like using crunchy nut butter in this recipe. I much prefer smooth.
7 tbsp coconut oil, melted
2 tbsp raw cocoa
2 tsp vanilla extract or 1 vanilla pod
1/2 cup crushed sunflower seeds (optional, my kiddies don’t like it)
Mix it all well and return to pot to melt a little longer if it isn’t mixing!
In a separate bowl, pour in 150 grams of health connection puffed brown rice~ 1 and a half bags.
Pour your delicious syrupy mix over the puffed rice and mix until it is all coated! It should start clumping together. Then gently turn it out into a baking tray and flatten it out with a spatula. Press down rather hard so it sticks together!
Place in the fridge, not freezer for at least 2 hours until it has set nicely. Cut into blocks (no, I know what you are thinking! Blocks about the size of a matchbox) and eat two!
