Falafel, falafel, falafel

One of those words and dishes I just can’t get enough of! Falafel. Tasty balls of chickpea goodness. Of Middle Eastern origin. Just plain, yum!

Here is what you will need:

1 cup cooked Chickpeas (try to avoid canned chickpeas, that have brine added which means added salt. Rather cook up dried chickpeas from scratch.)

1 onion chopped.

2 garlic cloves (none of that bottled nonsense)

1 teaspoon coriander powder

1/2 teaspoon of red chilly powder

1 teaspoon cumin

1/2 teaspoon crushed black pepper

2 tbsp wholewheat flour

3 tbsp coriander leaves, finely chopped

1 tbsp freshly squeezed lemon juice

Pinch of Himalayan sea salt.

Coconut oil for frying

How to:

Blend all the ingredients together until smooth. Form balls. Fry in coconut oil until golden brown. Turn them over often to ensure they don’t burn (Like my batch did hahaha)
