These spectacularly pretty and tasty frozen cups are so easy to make and they go down so well on a hot day! Super safe for the whole family!
Here’s what you will need:
1 cup raw oats
1 cup sugar free muesli (I like alpen sugar free)
1 cup natural nut butter or peanut butter
1/2 coconut oil
1/2 cup honey
1 full cream greek yoghurt
1/2 cup chopped dates
fresh fruit for topping

What to do:
In a saucepan, melt the nut butter, coconut oil and honey till runny!

Then add the oats and muesli (if you are particularly busy during the day and very active, then add chopped dates and raisins to this mix for more energy)
Mix everything well, until all the flakes and muesli are coated.

Using a silicone muffin tray (this is the only time I use silicone when I bake because i can push the cupcakes out easily. I don’t like heating silicone!)

If you are using a conventional muffin tin then place cupcake holders in each hole. Fill the bottom half with the muesli and oat mix. Press down well. Once you have done this, spoon in the greek yoghurt. You can mix in some fresh fruit here if you like! strawberries, blueberries, mango chunks… YUM!

Top each cupcake with a date, or mixed chopped nuts, even a slice of fruit! Drizzle some honey over the top! Delish

Cover with tin foil and place in the freezer. Pop out one at a time and tupperware. Remove when you need to eat one or two, not three! hahah
