Nice-cream

Sneaky yet satisfying..that is my motto when making things for the kiddies and my hubby! I gave up sugar 12 years ago so I can’t stand anything sweet, honestly it makes me cringe! On the flip side, my family adores sweet treats! Especially ice cream! Store bought ice cream contains disgusting unnecessary ingredients and you can so easily make your own! No need for an ice cream maker, just a blender, Popsicle moulds and a freezer!

Here are a few of our favourites:

Choc-avo delight:

1 whole ripe avo

1 can full cream coconut cream (look out for the purest ingredients, especially ones that don’t contain bleaching agent..i mean EW!)

2 tablespoons raw cocoa

1 tablespoon melted coconut oil

Blend till smooth (preferably while no one is watching what goes in) and then pour over into ice cream moulds!

Freeze and devour!

Watermelon lush:

1 can coconut cream

1 tsp vanilla pod or extract

2 cups freshly cubed watermelon (take the pips out, if your family is anything like mine the slightest hint of anything pip form makes them run for it!)

squeeze of lemon for some zing

blend, freeze and annihilate

Banana coco:

2 ripe bananas (i prefer using the bananas with the tips still slightly green)

1/2 cup nut/peanut butter (homemade always preferable, then nature’s choice, black cat yellow lid or yum yum blue lid – these have no added sugar)

2 dates soaked overnight in rooibos tea so they are all nice and puffy

1 tbsp raw cocoa

Blend, freeze and wipe out, 1 lolly at a time!

Strawberry slurprise:

2 ripe bananas

1 can coconut cream

1/2 cup fresh strawberries (remove the green bits ofcourse)

1 teaspoon vanilla pod or extract

Blend and freeze then stand back and watch the family pulverize them!

Berry frozen yoghurt:

2 cups mixed frozen berries

1 ripe banana (you can freeze this too if you like, when my bananas start looking a little too ripe for my liking I chop em up and freeze them. Ready for smoothies and ice cream)

1 cup double cream greek yoghurt (make sure there are some good live cultures in there)

1 squeeze of fresh lemon

2 tbsp raw honey.

Blitz, mould, freeze, chomp!

Chunky monkey ice cream (from Emilie Eats)

4 Bananas, frozen

1 cup Dates, pitted (i soak them in rooibos tea to soften them)

1/4 cup full cream milk

1 tsp Cinnamon

2 tbsp Cocoa powder

1/4 cup Oat flour

1 Pinch Salt

1 tsp Vanilla extract

1/2 cup Walnuts (crush em before you mix them in)

 

  1. In a blender or food processor, add dates, oat flour, cocoa powder, 1 teaspoon vanilla, and a pinch of salt. Pulse until a dough forms.
  2. Pinch off little bits of the dough and place onto a place or baking sheet. Repeat until all the dough is used up. Place in the freezer for at least 15 minutes.
  3. In a food processor, add bananas, milk, cinnamon, and ½ teaspoon vanilla. Process until it forms a smooth ice cream texture, adding a little milk at a time if needed.
  4. Add walnuts and frozen bits to the banana mixture. Stir to combine thoroughly.
  5. Pour the ice cream into a freezer-safe container. Place in the freezer for at least 20 minutes.

SJOEEEEEE!

Pinepapple…yes, papple (my kids always called it pinepapple)

1 can coconut cream

1 ripe pineapple, spikes and sharp dangerous leaves removed. Youch!

1 squeeze fresh lemon juice

pinch of salt

2 dates soaked in rooibos tea

Blits till smooth, mould, freeze! WHAM!

Greentea and lemon:

My favourite one because it isn’t sweet but super refreshing!!!

1green tea teabag

1 litre of boiling water

1 lemon tea teabag

1 squeeze of fresh lemon then that same lemon sliced up!

Allow the teabags to steep in the boiling water for 4-6minutes

pour over into a jug. Add the fresh lemon juice and the lemon slices

Allow to stand and draw for at least 20minutes

Pour over into moulds, making sure that you get a slice of lemon in each mould. I like to eat lemon slices, if this isnt your thing then rather use the lemon cells in your mix!

Freeze and enjoy! If you want to be naughty for a party add a splash of vodka. Just don’t put the popsicles on the shelf where the kids Popsicle’s normally are.
