Squishy sumptuous Marshmallows!

Kids (and adults) loooove marshmallows! Except they come with a staggering amount of nasty sugar! YUCK!

Here is a lovely, healthy, alternative that I use regularly for my family. I use it to make crispy treats (with puffed brown rice) for the kids cakes, I roll them into ‘cannon balls’ for tasty treats. The list is endless! So versatile!

If you are vegan, swap out the honey for agave or maple syrup and voila!

I normally triple the batch to make a nice full tray of squishy’s

You will need:

1 cup water

1/2 teaspoon vanilla extract

3 tbsp honey or agave or maple syrup (good quality)

3 tbsp agar agar (plant based gelatine) or powdered gelatine if you can’t find agar

How to:

Mix 1/2 cup of water and the agar in a bowl. stir up!

In a pan, mix the honey, rest of the water and the vanilla and bring to the boil. Turn down the heat and simmer for another 8 minutes.

Slowly pour the hot mix into the agar mix and start whipping with electric mixer!

It normally takes me anything from 15-30 minutes to get a fluffy white looking mixture going. It should form peaks!

You can separate the batch and add natural food colouring like beetroot juice or food state colouring.

Prep your tray with a light coating of arrow root or corn flour,

Transfer over into a tray, sprinkle more arrow root (or corn flour) and now you put it in the fridge for 3 hours!

Light and fluffy!
