I honestly have to make this bread at least once a week! My family loves it! I don’t have any due to the wheat and I am still trying to perfect the rye version of this, so I will keep you posted! It is a lovely alternative to store bought breads which contain so many additives and preservatives. Ever noticed how long a loaf actually lasts? Home baked breads last 2-3 days max!
This recipe was adapted from the book The farm kitchen! It is a wonderful, homely bread that is so easy to make and it makes around 4 loaves which you can freeze! YAY! What I also like to do is make little rolls in muffin trays. See what works best for your family!
You will need:

500g mashed sweet potato (cooked weight)
900ml lukewarm water
1.5kg EUREKA wholewheat flour (Bio-wheat is also lovely and so is natures choice!)
20ml salt
15g fast acting yeast
Preheat oven to 220 degrees. Blend the sweet potato and warm water until smooth. Add all the other ingredients in a separate bowl. And make a well in the middle. Add the sweet potato mix and knead into dry ingredients. Once a ball forms, turn out the dough onto a floured surface and knead well. The dough must be smooth and very elastic. Leave to rise in a warm place until it doubles! Knock the dough down and divide into 4 (for four loaves) or roll into small balls for rolls and place into a muffin tray (I find this easier) bake for 15 minutes at 220 then reduce the heat and bake at 180 for 30-40 min (for loaves) or another 10-15 minutes (for rolls.)
Makes 4 loaves or 24 rolls!
As you can see from the pics, the kids do the hard work (mixing) and we don’t have an electric oven or stove so all our cooking is done on the dover stove (wood or coal fire) and gas stove. I like to cook our loaves in a cast iron bread tin, either on the gas or in the dover. This recipe really works well on the braai too. Just not over direct heat, sort of to the side! I double or triple this recipe in the summer months because we seldom use our dover stove. In winter that stove works day and night, to heat the house and our water!
